Blend: Ratafia de Champagne liqueur is made from 100% Champagne grapes but rather than being harvested early, like those used for sparkling wines, the grapes are allowed to ripen to full maturity. They are then left to dry out for several months over winter, rehydrated and fermented in the springtime. It is aged for at least 4 years before being bottled.
Tasting notes: A lovely tawny colour and rich, complex dried fruit flavours. 18% proof.
Serve with: Fantastic as a Champagne shot chaser. Can be also served as a long drink with American ginger ale. We suggest cooking with game meats adding double shot of liqueur per portion. Can also be served with foie gras with a cherry-cognac coulis.
